Thai Fried Rice

Ingredients

  • 2 cups jasmine rice
  • 6 cloves garlic, crushed
  • Peanut Oil
  • 6 Eggs
  • 1 package Fake Crab Meat
  • 2 Large Shallots, minced
  • 2 bunches of green onion, chopped
  • 1 lb carrots, sliced
  • 1 Lime
  • Cilantro (optional)

  • 2 Tbsp Fish Sauce
  • 2 tsp Soy Sauce
  • 2 tsp water
  • 2 tsp white sugar

Instructions

(PREP) Cook Jasmine Rice, spread on sheet pan with parchment paper (absorbs water), and chill for at least 2-4 hours. Or overnight. If you leave it too long it will be too hard, so be careful.

Chop all your veggies. Slice fake crab or rip it apart with your fingers like the monster you are. Mix sauce ingredients together in a bowl, dissolve sugar as best you can.

Add some oil to the wok and heat. Add eggs, scramble into small curds, cook until solid but not overdone. Remove eggs from pan and set aside.

Add more oil, add 2 cloves of garlic - sautee them a little bit and then add the crab. Heat/cook to infuse crab with yummy garlic flavors. Remove crab from pan and set aside. I usually stack the crab on top of the eggs.

Add more oil, remaining garlic, shallots, green onion whites. Cook a bit. Add carrots, cook until not crunchy anymore - smaller pieces cook faster. Once carrots are cooked, add rice and mix. Add in crab and eggs, mix. Add sauce, add lime juice to taste.
